OSCAR® Signature Chicken Fond is made from chicken bones and gives a lovely intense chicken fond with lots of meaty flavour. Our chicken fond gives you a variety of possibilities; you can use it as a base for soups and sauces where you do not necessarily need the roasted flavour. You can also reduce our chicken fond and use it in a cold cream, e.g. in a mayonnaise for chicken salad. Made with 2.3kg chicken bones per 1l fond.

OSCAR® Signature Veal Fond has a natural sweetness and a high content of collagen from the veal bones. You can reduce the fond and get a delicious thick, natural glace due to the high collagen content. It goes well with many different dishes and meats. The sweetness of the veal is great in a classic pepper sauce. Made with 2,1 kg veal bones per 1l fond.

OSCAR® Signature Shellfish Fond has a classic intense flavour profile with authentic notes of shellfish and is great in sauces, soups and bisques. You get a complex fond but with lots of depth and base that makes it easy to develop further. You can reduce it without it becoming bitter. You can also use it reduced cold in e.g. a shellfish dressing or as a slightly warm and light espuma from siphon. Made with 0.32kg shellfish per 1l fond.

OSCAR® Vegetable Fond Concentrate you get a good, intense vegetable base. OSCAR® Vegetable Fond has an authentic taste that provides you with a wide variety of possibilities. You can use OSCAR® Vegetable Fond in vegetable dishes to add flavour and intensity. You can also use OSCAR® Vegetable Fond in soups and sauces, for braised dishes or in court bouillon – you can also try seasoning your risotto with OSCAR® Vegetable Fond Concentrate. Use it for cold dishes, e.g. vinaigrettes, dressings or for marinating vegetables. Bottle with 1l of concentrate, gives up to 51l of fond.

OSCAR® Beef Fond Concentrate is an intense beef fond that is great with heavy or dark sauces. You get a fond with a good base and depth. You can use Beef Fond Concentrate, for example, as a base for your red-wine sauce, madeira sauce, or for stews or braised dishes such as beef bourguignon. It is also great for adjusting the dish if it needs an additional boost. Bottle with 1l of concentrate, gives up to 51l of fond.

OSCAR® Premium Black Garlic Paste has a pure and intense taste of fermented garlic with deep umami and a good body. Fermented garlic is a traditional Asian method of preserving garlic where the onions are dried under controlled heat and moisture conditions. The fermentation process transforms the intense, sharp taste into a mild garlicky flavour, full of umami. Fermented garlic has been used in Asia for hundreds of years but not until recently has it found its way to the European cuisine where it is used to add a natural boost to the taste profiles in various dishes.
